Red, White & Blue Grilled Chicken Salad
If you are looking for a festive dish that is rich in protein, antioxidants and heart-healthy fats, as well as one that takes little time to prepare, consider pulling together a yummy salad. Here's all you need:
Two boneless, skinless chicken breasts
Two tablespoons olive oil
Salt, pepper, garlic powder to taste
Four cups mixed greens
One cup strawberries, sliced
½ cup blueberries
¼ cup crumbled feta cheese
¼ cup chopped pecans or walnuts
Two tablespoons balsamic vinegar
Season the chicken with one tablespoon olive oil, salt, pepper, and garlic powder. Grill over medium heat for six to seven minutes per side, or until fully cooked. Let rest, then slice. In a large bowl, combine greens, strawberries, blueberries, feta and nuts. Top with grilled chicken. Drizzle with olive oil and balsamic vinegar before serving.
