Mediterranean Grilled Chicken and Veggie Bowl

A fresh, summer dish that is rich in lean protein, healthy fats, fiber and Mediterranean-inspired flavors linked to heart health.  

2 tablespoons of olive oil  

Juice of 1 lemon 

1 clove of garlic, minced 

1 teaspoon dried oregano 

Celtic sea salt and pepper to taste 

2 boneless, skinless chicken breasts 

1 zucchini, sliced  

1 red bell pepper, sliced  

1 red onion, cut into wedges 

1 cup cherry tomatoes 

Optional: feta cheese, hummus or whole grain couscous 

 

In a bowl, whisk olive oil, lemon juice, garlic, oregano, salt and pepper. Marinate chicken for at least 30 minutes. Toss vegetables lightly with remaining marinade. Grill chicken about 6 to 7 minutes per side until fully cooked. Grill vegetables until tender and slightly charred. Slice chicken and serve over a bowl of grilled vegetables. Add feta or scoop of hummus if desired. Yield: 4 servings
